Process Natural Anaerobic

Drying Method

For the natural Anaerobic process, we picked only 100% red ripe cherries and put them in a yellow plastic bags along with a cinnamon stick barks and press the bag to push the air out to almost a vacuum status. After we seal the end of the plastic bag.

No air should be allowed to get in or get out of the bags. Then we put the sealed plastic bags under a shade for 192 hours to continue the fermentation process. When the time is ready, it will start the slow drying process under shades in the sun on so called "African drying beds" for approx. 18-21 days. The drying bed should be cover from 11am to 2 pm to avoid strong sunshine and temperature of cherries should be no higher than 41 degrees during drying. When the night comes, the beds are carefully covered to protect it from rain fall
